Chinese Chicken Recipes - Far Eastern Chicken Recipe

Ingredients

  • 60 ml/4 tbsp groundnut (peanut) oil

  • 450 g/1lb chicken meat, cut into chunks

  • 2 cloves garlic, crushed

  • 2.5 ml/1/2 tsp salt

  • 2 onions, chopped

  • 2 pieces stem ginger, chopped

  • 45 ml/3 tbsp soy sauce

  • 30 ml/2 tbsp hoisin sauce

  • 45 ml/3 tbsp rice wine or dry sherry

  • 300 ml/1 1/4 cups chicken stock

  • 5 ml/1 tsp freshly ground pepper

  • 6 hard-boiled (hard-cooked) eggs, chopped

  • 15 ml/1 tbsp corn-flour (cornstarch)

  • 15 ml/1 tbsp water


Method:

  1. Heat the oil and fry the chicken until golden brown. Add the garlic, salt, onions and ginger and fry for 2 minutes.

  2. Add the soy sauce, hoisin sauce, wine or sherry, stock and pepper. Bring to the boil, cover and simmer for 30 minutes. Add the eggs.

  3. Mix the corn-flour and water and stir it into the sauce. Bring to the boil and simmer, stirring, until the sauce thickens.
