Ingredients

ml/4 tbsp groundnut (peanut) oil

450 g/1lb chicken meat,
cut into chunks

2 cloves garlic, crushed

2.5 ml/1/2 tsp salt

2 onions, chopped
-
2 pieces stem ginger,
chopped

ml/3 tbsp soy sauce
-
30 ml/2 tbsp hoisin sauce

45 ml/3 tbsp rice wine or
dry sherry

300 ml/1 1/4 cups
chicken stock

5 ml/1 tsp freshly ground pepper

6 hard-boiled (hard-cooked)
eggs, chopped

15 ml/1 tbsp corn-flour
(cornstarch)

15 ml/1 tbsp
water
Method:

Heat the oil and fry the chicken until golden brown.
Add the garlic, salt, onions and ginger and fry for
2 minutes.

Add the soy sauce, hoisin sauce, wine or
sherry, stock and pepper. Bring to the boil, cover
and simmer for 30 minutes. Add the eggs.

Mix the corn-flour and water and stir it into the sauce.
Bring to the boil and simmer, stirring, until the
sauce thickens.
