Recipes - Fried Chicken with Cucumber Recipe
Ingredients
225 g/8 oz chicken meat
1 egg white
2.5 ml/1/2 tsp corn-flour
(cornstarch)
salt
1/2 cucumber
30 ml/2 tbsp groundnut
(peanut) oil
100 g/4 oz button mushrooms
50 g/2 oz bamboo shoots,
cut into strips
50 g/2 oz ham, diced
15 ml/1 tbsp water
2.5 ml/1/2 tsp salt
2.5 ml1/2 tsp rice wine or
dry sherry
2.5 ml/1/2 tsp sesame oil
Method:
Slice the chicken and cut it into chunks. Mix with
the egg white, corn-flour and salt and leave to
stand.
Halve the cucumber lengthways and cut
diagonally into thick slices. Heat the oil and
stir-fry the chicken until lightly browned then
remove from the pan.
Add the cucumber and bamboo
shoots and stir-fry for 1 minute. Return the chicken
to the pan with the ham, water, salt and wine or
sherry.
Bring to the boil and simmer until the
chicken is tender. Serve sprinkled with sesame oil.
