Chinese Chicken Recipes - Fried Poussins Recipe

Ingredients

  • 2 poussins, halved

  • 45ml/3 tbsp soy sauce

  • 45ml/3 tbsp rice wine or dry sherry

  • 120ml/1/2 cup peanut oil

  • 1 spring onion, finely chopped

  • 30ml/2 tbsp chicken stock

  • 10ml/2 tsp sugar

  • 5ml/1 tsp chili oil

  • 5ml/1 tsp garlic paste

  • salt and pepper


Method:

  1. Place the poussins in a bowl. Mix the soy sauce and wine or sherry, pour over the poussins, cover and marinate for 2 hours, basting frequently.

  2. Heat the oil and fry the poussins for about 20 minutes until cooked through. Remove them from the pan and reheat the oil.

  3. Return them to the pan and fry until golden brown. Drain off most of the oil.

  4. Mix together the remaining ingredients, add to the pan and heat through quickly. Pour over the poussins before serving.
