Chinese Chicken Recipes - Ginger Chicken with Mushrooms and Chestnuts Recipe

Ingredients

  • 60 ml/4 tbsp groundnut (peanut) oil

  • 225 g/8 oz onions, sliced

  • 450 g/1lb chicken meat, diced

  • 100 g/4 oz mushrooms, sliced

  • 30 ml/2 tbsp plain (all-purpose) flour

  • 60 ml/4 tbsp soy sauce

  • 10 ml/2 tsp sugar

  • salt and freshly ground pepper

  • 900 ml/3 3/4 cups hot water

  • 2 slices ginger root, chopped

  • 450 g/1lb water chestnuts


Method:

  1. Heat the half oil and fry the onions for 3 minutes then remove them from the pan. Heat the remaining oil and fry the chicken until lightly browned.

  2. Add the mushrooms and cook for 2 minutes. Sprinkle the mixture with flour then stir in the soy sauce, sugar, salt and pepper.

  3. Pour in the water and ginger, onions and chestnuts. Bring to the boil, cover and simmer gently for 20 minutes.

  4. Remove the lid and continue to simmer gently until the sauce has reduced.
