Chinese Chicken
Recipes - Ginger and Spring Onion Chicken Recipe
Ingredients

1 chicken
-
2 slices ginger root, cut
into strips
-
salt and freshly ground pepper
-
90 ml/4 tbsp groundnut
(peanut) oil
-
8 spring onions (scallions), finely
chopped

10 ml/2 tsp white wine
vinegar
-
5 ml/1 tsp sauce
Method:
-
Place the chicken in a large saucepan, add half the
ginger and pour in enough water almost to cover the
chicken. Season with salt and pepper.

Bring to the
boil, cover and simmer for about 1 1/4 hours until
tender.

Leave the chicken to stand in the stock
until cool. Drain the chicken and refrigerate until
cold. Cut into portions.

Grate the remaining ginger and mix with the oil,
spring onions, wine vinegar and soy sauce and salt
and pepper.

Refrigerate for 1 hour. Place the
chicken pieces in a serving bowl and pour over the
ginger dressing. Serve with steamed rice.
