Chinese Chicken Recipes - Golden Coins Recipe

Ingredients

  • 4 chicken breast fillets

  • 30 ml/2 tbsp honey

  • 30 ml/2 tbsp wine vinegar

  • 30 ml/2 tbsp tomato ketchup (catsup)

  • 30 ml/2 tbsp soy sauce

  • pinch of salt

  • 2 cloves garlic, crushed

  • 5 ml/1 tsp five-spice powder

  • 45 ml/3 tbsp plain (all-purpose) flour

  • 2 eggs, beaten

  • 5 ml/1 tsp grated root ginger

  • 5 ml/1 tsp grated lemon rind

  • 100 g/4 oz/1 cup dried breadcrumbs

  • oil for deep-frying


Method:

  1. Put the chicken into a bowl. Mix together the honey, wine vinegar, tomato ketchup, soy sauce, salt, garlic and five-spice powder.

  2. Pour over the chicken, stir well, cover and marinate in the refrigerator for 12 hours.

  3. Remove the chicken from the marinade and cut into finger thick strips. Dust with flour. Beat the eggs, ginger and lemon rind.

  4. Coat the chicken in the mixture then in the breadcrumbs until evenly coated. Heat the oil and deep-fry the chicken until golden brown.
