Chinese Chicken Recipes - Hoisin Chicken Drumsticks Recipe

Ingredients

  • 8 chicken drumsticks

  • 600 ml/2 1/2 cups chicken stock

  • salt and freshly ground pepper

  • 250 ml/8 fl oz/1 cup hoisin sauce

  • 30 ml/2 tbsp plain (all-purpose) flour

  • 2 eggs, beaten

  • 100 g/4 oz/1 cup breadcrumbs

  • oil for deep-frying


Method:

  1. Place the drumsticks and stock in a pan, bring to the boil, cover and sim­mer for 20 minutes until cooked.

  2. Remove the chicken from the pan and pat dry on kitchen paper. Place the chicken in a bowl and season with salt and pepper.

  3. Pour over the hoisin sauce and leave to marinate for 1 hour. Drain.

  4. Toss the chicken in the flour then coat in the eggs and breadcrumbs, then in egg and breadcrumbs again.

  5. Heat the oil and fry the chicken for about 5 minutes until golden brown. Drain on kitchen paper and serve hot or cold.
