Ingredients

30 ml/2 tbsp groundnut
(peanut) oil

4 chicken pieces
-
30 ml/2 tbsp soy sauce
-
120 ml/4 fl oz/1/2 cup rice
wine or dry sherry

30 ml/2 tbsp honey
-
5 ml/1 tsp salt
-
1 spring onion (scallion), chopped
-
1 slice ginger root, finely
chopped
Method:
-
Heat the oil and
fry the chicken until browned on all sides. Drain
off excess oil.

Mix together the
remaining ingredients and pour them into the pan.
-
Bring to the
boil, cover and simmer for about 40 minutes until
the chicken is cooked through.
