Chinese Chicken
Recipes - Hot Chili Chicken Recipe
Ingredients
350 g/1lb chicken meat,
cubed
1 egg, lightly beaten
10 ml/2 tsp soy sauce
2.5 ml/1/2 tsp corn-flour
(cornstarch)
oil for deep-frying
1 green pepper, diced
4 cloves garlic, crushed
2 red chili peppers,
shredded
5 ml/1 tsp freshly ground
pepper
5 ml/1 tsp wine vinegar
5 ml/1 tsp water
2.5 ml/1/2 tsp sugar
2.5 ml/1/2 tsp chili oil
2.5 ml/1/2 tsp
sesame oil
Method:
Mix the chicken with the egg, half the soy sauce and
the corn-flour and leave to stand for 30 minutes.
Heat the oil and deep-fry the chicken until golden
brown then drain well.
Pour off all but 15 ml/1 tbsp
of oil from the pan, add the pepper, garlic and
chili peppers and fry for 30 seconds. Add the
pepper, wine vinegar, water and sugar and fry for 30
seconds.
Return the chicken to the pan and stir-fry
for a few minutes until cooked through. Serve
sprinkled with chili and sesame oils.
