Chinese Chicken
Recipes - Marinated Chicken Wings Recipe
Ingredients

45 ml/3 tbsp soy sauce
-
45 ml/3 tbsp rice wine or
dry sherry
-
30 ml/2 tbsp brown sugar
-
5 ml/1 tsp grated ginger
root
-
2 cloves garlic, crushed
-
6 spring onions
(scallions), sliced
-
450 g/1lb chicken wings
-
30 ml/2 tbsp groundnut
(peanut) oil
-
225 g/8 oz bamboo shoots,
sliced
-
20 ml/4 tsp corn-flour
(cornstarch)
-
175 ml/6 fl oz/3/4 cup
chicken stock
Method:
-
Mix together the soy sauce, wine or sherry, sugar,
ginger, garlic and spring onions.

Add the chicken
wings and stir to coat completely. Cover and leave
to stand for 1 hour, stirring occasionally.

Heat the
oil and stir-fry the bamboo shoots for 2 minutes.
Remove them from the pan. Drain the chicken and
onions, reserving the marinade.

Reheat the oil and
stir-fry the chicken until browned on all sides.
Cover and cook for a further 20 minutes until the
chicken is tender.

Blend the corn-flour with the
stock and the reserved marinade. Pour over the
chicken and bring to the boil, stirring, until the
sauce thickens.

Stir in the bamboo shoots and
simmer, stirring, for a further 2 minutes.
