Chinese Chicken
Recipes - Marinated Golden Chicken Stew Recipe
Ingredients

4 chicken pieces
-
300 ml/1 1/4 cups soy
sauce
-
oil for deep-frying
-
4 spring onions
(scallions), thickly sliced
-
1 slice ginger root, minced
-
2 red chili peppers,
sliced
-
3
cloves star anise
-
50 g/2 oz bamboo shoots,
sliced
-
150 ml/2/3 cup
chicken stock
-
30 ml/2 tbsp corn-flour
(cornstarch)

60 ml/4 tbsp water
-
5 ml/1 tsp sesame oil
Method:
-
Cut the chicken into large chunks and marinate in
the soy sauce for 10 minutes. Remove and drain,
reserving the soy sauce.

Heat the oil and deep-fry
the chicken for about 2 minutes until lightly
browned. Remove and drain.

Pour off all but 30
ml/2 tbsp of the oil then add the spring onions,
ginger, chili peppers and star anise arid fry for 1
minute.

Return the chicken to the pan with the
bamboo shoots and reserved soy sauce and add just
enough stock to cover the chicken. Bring to the boil
and simmer for about 10 minutes until the chicken is
tender.

Remove the chicken from the sauce with a
slotted spoon and arrange on a warmed serving dish.
Strain the sauce then return it to the pan.

Blend
the corn-flour and water to a paste, stir into the
sauce and simmer, stirring, until the sauce
thickens. Pour over the chicken and serve sprinkled
with a little sesame oil.
