Chinese Chicken Recipes - Orange and Lemon Chicken Recipe
Ingredients
-
350 g/1lb chicken meat,
cut into strips
-
30 ml/2 tbsp groundnut
(peanut) oil
-
2 cloves garlic, crushed
-
2 slices ginger root,
minced
-
grated rind of 1/2 orange
-
grated rind of 1/2 lemon
-
45 ml/3 tbsp orange juice
-
45 ml/3 tbsp lemon juice
-
15 ml/1 tbsp soy sauce
-
3 spring onions
(scallions), chopped
-
15 ml/1 tbsp corn-flour
(cornstarch)
-
45 ml/1 tbsp water
Method:
-
Blanch the chicken in boiling water for 30 seconds
then drain. Heat the oil and stir-fry the garlic and
ginger for 30 seconds.

Add the orange and lemon rind
and juice, soy sauce and spring onions and stir-fry
for 2 minutes.
-
Add the chicken and simmer for a few
minutes until the chicken is tender.
-
Blend the corn-flour and water to a paste, stir into
the pan and simmer, stirring, until the sauce
thickens.
