Chinese Chicken Recipes - Orange and Lemon Chicken Recipe

Ingredients

  • 350 g/1lb chicken meat, cut into strips

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 2 cloves garlic, crushed

  • 2 slices ginger root, minced

  • grated rind of 1/2 orange

  • grated rind of 1/2 lemon

  • 45 ml/3 tbsp orange juice

  • 45 ml/3 tbsp lemon juice

  • 15 ml/1 tbsp soy sauce

  • 3 spring onions (scallions), chopped

  • 15 ml/1 tbsp corn-flour (cornstarch)

  • 45 ml/1 tbsp water


Method:

  1. Blanch the chicken in boiling water for 30 seconds then drain. Heat the oil and stir-fry the garlic and ginger for 30 seconds.

  2. Add the orange and lemon rind and juice, soy sauce and spring onions and stir-fry for 2 minutes.

  3. Add the chicken and simmer for a few minutes until the chicken is tender.

  4. Blend the corn-flour and water to a paste, stir into the pan and simmer, stirring, until the sauce thickens.
