Chinese Chicken Recipes - Peking Chicken Recipe

Ingredients

  • 4 chicken portions

  • salt and freshly ground pepper

  • 5 ml/1 tsp sugar

  • 1 spring onion (scallion), chopped

  • 1 slice ginger root, minced

  • 15 ml/1 tbsp soy sauce

  • 15 ml/1 tbsp rice wine or dry sherry

  • 15 ml/1 tbsp corn-flour (cornstarch)

  • oil for deep-frying


Method:

  1. Place the chicken portions in a shallow bowl and sprinkle with salt and pepper.

  2. Mix the sugar, spring onion ginger, soy sauce and wine or sherry, rub into the chicken, cover and leave to marinate for 3 hours. Drain the chicken and dust it with corn-flour.

  3. Heat the oil and deep-fry the chicken. until golden brown and cooked through. Drain well before serving.
