Chinese Chicken Recipes - Peking Chicken Recipe
Ingredients

4 chicken portions
-
salt and freshly ground
pepper
-
5 ml/1 tsp sugar
-
1 spring onion (scallion),
chopped
-
1 slice ginger root, minced
-
15 ml/1 tbsp soy sauce
-
15 ml/1 tbsp rice wine or
dry sherry
-
15 ml/1 tbsp corn-flour
(cornstarch)

oil for deep-frying
Method:
-
Place the chicken portions in a shallow bowl and
sprinkle with salt and pepper.

Mix the sugar, spring
onion ginger, soy sauce and wine or sherry, rub into
the chicken, cover and leave to marinate for 3
hours. Drain the chicken and dust it with corn-flour.

Heat the oil and deep-fry the chicken. until golden
brown and cooked through. Drain well before serving.
