Chinese Chicken Recipes - Poached Chicken Recipe

Ingredients

  • 1 chicken

  • 1.2 l/2 pts/5 cups chicken stock or water

  • 30 ml/2 tbsp rice wine or dry sherry

  • 4 spring onions (scallions), chopped

  • 1 slice ginger root

  • 5 ml/1 tsp salt


Method:

  1. Place the chicken in a large saucepan with all the remaining ingredients. The stock or water should come half way up the thigh.

  2. Bring to the boil, cover and simmer gently for about 1 hour until the chicken is thoroughly cooked. Drain, reserving the stock for soups.
