Chinese Leaves Recipe
Ingredients

4 duck breast
fillets, cut into strips

2.5 ml/1/2 tsp
five-spice powder
-
30 ml/2 tbsp soy
sauce
-
15 ml/1 tbsp sesame
oil
-
15 ml/1 tbsp
groundnut (peanut) oil
-
3 stalks celery,
diced
-
2 slices pineapple,
diced
-
100 g/4 oz melon,
diced
-
100 g/4 oz lychees,
halved
-
130 ml/4 fl oz/1/2 cup chicken stock
-
30 ml/2 tbsp
tomato puree (paste)
-
30 ml/2 tbsp hoisin
sauce
-
10 ml/2 tsp wine
vinegar
-
pinch of brown
sugar
Method:
-
Cut the duck into about 6 pieces. Mix
together the
wine or sherry, hoisin sauce, corn-flour, salt and
sugar and rub over the duck. Leave to stand for 1
hour.

Heat the oil and
fry the spring onions, garlic
and ginger for a few seconds.

Add the duck and fry
until lightly browned on all sides. Drain off any
excess fat.

Pour in the soy sauce and water, bring
to the boil, cover and simmer for about 30 minutes.

Add the Chinese leaves, cover again and simmer for a
further 30 minutes until the duck is tender.
