Chinese Chicken Recipes - Braised Duck with Pineapple Recipe

Ingredients

  • 1 duck

  • 400 g/14 oz canned pineapple chunks in syrup

  • 45 ml/3 tbsp soy sauce

  • 5 ml/1 tsp salt

  • pinch of freshly ground pepper


Method:

  1. Place the duck in a heavy-based pan, just cover with water, bring to the boil then cover and simmer for 1 hour.

  2. Drain the pineapple syrup into the pan with the soy sauce, salt and pepper, cover and simmer for a further 30 minutes.

  3. Add the pineapple pieces and simmer for a further 15 minutes until the duck is tender.
