Chinese Chicken Recipes - Braised Duck Recipe

Ingredients

  • 4 spring onions, chopped

  • 1 slice ginger root, minced

  • 120ml/1/2 cup soy sauce

  • 30ml/2 tbsp rice wine or dry sherry

  • 1 duck

  • 120/1/2 cups water

  • 15ml/1 tbsp brown sugar


Method:

  1. Mix together the spring onions, ginger, soy sauce and wine or sherry and rub it over the duck inside and out.

  2. Heat the oil and fry the duck until lightly browned on a sides. Drain off the oil.

  3. Add the water and the remaining soy sauce mixture, bring to the boil then cover and simmer for 1 hour.

  4. Add the sugar then cover and simmer for a further 40 minutes until the duck is tender.
