Chinese Chicken Recipes - Drunken Duck Recipe

Ingredients

  • 2 spring onions (scallions), chopped

  • 2 cloves garlic, chopped

  • 1.5l/6 cups water

  • 1 duck

  • 450 ml/2 cups rice wine or dry


Method:

  1. Place the spring onions, garlic and water in a large pan and bring to the boil.

  2. Add the duck, return to the boil, cover and simmer for 45 minutes. Drain well, reserving the liquid for stock.

  3. Leave the duck to cool then refrigerate overnight. Cut the duck into pieces and place them in a large screw-top jar.

  4. Pour over the wine or sherry and chill for about 1 week before draining and serving cold.
