Recipes - Duck with Bamboo Shoots Recipe
Ingredients

6 dried Chinese
mushrooms
-
1 duck
-
50 g/2 oz smoked
ham, cut into strips
-
100 g/4 oz bamboo
shoots, cut into strips
-
2 spring onions
(scallions), cut into strips
-
2 slices
ginger root, cut into strips
-
5 ml/1 tsp salt
Method:

Soak the mushrooms in warm water for 30 minutes then
drain. Discard the stalks and cut the caps into
strips.

Place all the ingredients in a heatproof
bowl and stand in a pan filled with water to come
two-thirds of the way up the bowl.

Bring to the
boil, cover and simmer for about 2 hours until the
duck is cooked, topping up with boiling water as
necessary.
