Chinese Chicken Recipes - Duck with Bean Sprouts Recipe

Ingredients

  • 225 g/8 oz bean sprouts

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 450 g/1lb cooked duck meat

  • 15 ml/1 tbsp oyster sauce

  • 15ml/1 tbsp rice wine or dry sherry

  • 30 ml/2 tbsp water

  • 2.5 ml/1/2 tsp salt


Method:

  1. Blanch the bean sprouts in boiling water for 2 minutes then drain. Heat the oil, stir-fry the bean sprouts for 30 seconds.

  2. Add the duck, stir-fry until heated through. Add the remaining ingredients and stir-fry for 2 minutes to blend the flavors. Serve at once.
