Ingredients

4 duck breast
fillets, cut into strips

2.5 ml/1/2 tsp
five-spice powder

30 ml/2 tbsp soy
sauce

15 ml/1 tbsp sesame
oil
-
15 ml/1 tbsp
groundnut (peanut) oil

3 stalks celery,
diced
-
2 slices pineapple,
diced
-
100 g/4 oz melon,
diced
-
100 g/4 oz lychees,
halved
-
130 ml/4 fl oz/1/2
cup chicken stock
-
30 ml/2 tbsp
tomato puree (paste)
-
30 ml/2 tbsp hoisin
sauce
-
10 ml/2 tsp wine
vinegar
-
pinch of brown
sugar
Method:
-
Place the duck in a bowl. Mix the five-spice powder,
soy sauce and sesame oil, pour over the duck and
marinate for 2 hours, stirring occasionally.

Heat the oil and
stir-fry the duck for 8 minutes. Remove from the
pan.

Add the celery
and fruits and stir-fry for 5 minutes. Return the
duck to the pan with the remaining ingredients bring
to the boil and simmer, stirring, for 2 minutes
before serving.
