Chinese Chicken Recipes - Duck with Exotic Fruits Recipe

Ingredients

  • 4 duck breast fillets, cut into strips

  • 2.5 ml/1/2 tsp five-spice powder

  • 30 ml/2 tbsp soy sauce

  • 15 ml/1 tbsp sesame oil

  • 15 ml/1 tbsp groundnut (peanut) oil

  • 3 stalks celery, diced

  • 2 slices pineapple, diced

  • 100 g/4 oz melon, diced

  • 100 g/4 oz lychees, halved

  • 130 ml/4 fl oz/1/2 cup chicken stock

  • 30 ml/2 tbsp tomato puree (paste)

  • 30 ml/2 tbsp hoisin sauce

  • 10 ml/2 tsp wine vinegar

  • pinch of brown sugar


Method:

  1. Place the duck in a bowl. Mix the five-spice powder, soy sauce and sesame oil, pour over the duck and marinate for 2 hours, stirring occasionally.

  2. Heat the oil and stir-fry the duck for 8 minutes. Remove from the pan.

  3. Add the celery and fruits and stir-fry for 5 minutes. Return the duck to the pan with the remaining ingredients bring to the boil and simmer, stirring, for 2 minutes before serving.
