Beans Recipe
Ingredients

1 duck
-
60 ml/4 tbsp
groundnut (peanut) oil
-
2 cloves garlic,
crushed
-
2.5 ml/1/2 tsp salt
-
1 onion, chopped
-
15 ml/1 tbsp grated
root ginger
-
45 ml/3 tbsp soy
sauce
-
120 ml/4 fl oz/1/2
cup rice wine or dry sherry
-
60 ml/4 tbsp tomato
ketchup (catsup)
-
45 ml/3 tbsp wine
vinegar
-
300 ml/1 1/4 cups chicken stock
-
450 g/1 lb green
beans, sliced
-
pinch of freshly ground
pepper
-
5 drops chili oil
-
15 ml/1 tbsp corn-flour (cornstarch)
-
30 ml/2 tbsp water
Method:
-
Chop the duck into 8 or 10 pieces. Heat the oil and
fry the duck until golden brown. Transfer to a bowl.

Add the garlic, salt, onion, ginger, soy sauce, wine
or sherry, tomato ketchup and wine vinegar. Mix,
cover and marinate in the refrigerator for 3 hours.

Reheat the oil, add the duck, stock and marinade,
bring to the boil, cover and simmer for 1 hour.

Add
the beans, cover and simmer for 15 minutes. Add the
pepper and chili oil.

Mix the corn-flour with the
water, stir it into the pan and simmer, stirring,
until the sauce thickens.
