Chinese Chicken Recipes - Duck with Green Beans Recipe

Ingredients

  • 1 duck

  • 60 ml/4 tbsp groundnut (peanut) oil

  • 2 cloves garlic, crushed

  • 2.5 ml/1/2 tsp salt

  • 1 onion, chopped

  • 15 ml/1 tbsp grated root ginger

  • 45 ml/3 tbsp soy sauce

  • 120 ml/4 fl oz/1/2 cup rice wine or dry sherry

  • 60 ml/4 tbsp tomato ketchup (catsup)

  • 45 ml/3 tbsp wine vinegar

  • 300 ml/1 1/4 cups chicken stock

  • 450 g/1 lb green beans, sliced

  • pinch of freshly ground pepper

  • 5 drops chili oil

  • 15 ml/1 tbsp corn-flour (cornstarch)

  • 30 ml/2 tbsp water


Method:

  1. Chop the duck into 8 or 10 pieces. Heat the oil and fry the duck until golden brown. Transfer to a bowl.

  2. Add the garlic, salt, onion, ginger, soy sauce, wine or sherry, tomato ketchup and wine vinegar. Mix, cover and marinate in the refrigerator for 3 hours.

  3. Reheat the oil, add the duck, stock and marinade, bring to the boil, cover and simmer for 1 hour.

  4. Add the beans, cover and simmer for 15 minutes. Add the pepper and chili oil.

  5. Mix the corn-flour with the water, stir it into the pan and simmer, stirring, until the sauce thickens.
