Chinese Chicken Recipes - Duck with Orange Recipe

Ingredients

• 1 duck

• 3 spring onions, cut into chunks

• 2 slices ginger root cut into strips

• 1 slice orange rind

• salt and freshly ground pepper

Method:

1. Place the duck in a large pan, just cover with water and bring to the boil.

2. Add the spring onions, ginger and orange rind, cover and simmer for about 1 1/2 hours until the duck is tender.

3. Season with salt and pepper, drain and serve.
