Chinese Chicken Recipes - Duck with Pears and Chestnuts Recipe

Ingredients

  • 225 g/8 oz chestnuts, shelled

  • 1 duck

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 250 ml/8 fl oz/1 cup chicken stock

  • 45 ml/3 tbsp soy sauce

  • 15 ml/1 tbsp rice wine or dry sherry

  • 5 ml/1 tsp salt

  • 1 slice ginger root, minced

  • 1 large pear, peeled and thickly sliced

  • 15 ml/1 tbsp sugar


Method:

  1. Boil the chestnuts for 15 minutes then drain. Chop the duck into 5 cm/2 in pieces.

  2. Heat the oil and fry the duck until lightly browned on all sides. Drain off any excess oil then add the stock, soy sauce, wine or sherry, salt and ginger.

  3. Bring to the boil, cover and simmer for 25 minutes, stirring occasionally. Add the chestnuts, cover and simmer for a further 15 minutes.

  4. Sprinkle the pear with sugar, add to the pan and simmer for about 5 minutes until heated through.
