Chinese Chicken Recipes - Duck with Pineapple and Lychees Recipe

Ingredients

  • 4 duck breasts

  • 15 ml/1 tbsp soy sauce

  • 1 clove star anise

  • 1 slice ginger root

  • groundnut (peanut) oil for deep-frying

  • 90 ml/6 tbsp wine vinegar

  • 100 g/4 oz/1/2 cup brown sugar

  • 250 ml/8 fl oz/1/2 cup chicken stock

  • 15 ml/1 tbsp tomato ketchup (catsup)

  • 200 g/7 oz canned pineapple chunks in syrup

  • 15 ml/1 tbsp corn-flour (cornstarch)

  • 6 canned lychees

  • 6 maraschino cherries


Method:

  1. Place the ducks, soy sauce, anise and ginger in a saucepan and just cover with cold water.

  2. Bring to the boil, skim, then cover and simmer for about 45 minutes until the duck is cooked. Drain and pat dry. Deep-fry in hot oil until crispy.

  3. Meanwhile, mix the wine vinegar, sugar, stock, tomato ketchup and 30 ml/2 tbsp of the pineapple syrup in a pan, bring to the boil and simmer for about 5 minutes until thick.

  4. Stir in the fruit and heat through before pouring over the duck to serve.
