Ingredients

4 duck
breasts
-
15 ml/1
tbsp soy sauce
-
1 clove
star anise
-
1 slice
ginger root
-
groundnut
(peanut) oil for deep-frying

90 ml/6
tbsp wine vinegar
-
100 g/4
oz/1/2 cup brown sugar
-
250 ml/8 fl
oz/1/2 cup chicken stock
-
15 ml/1
tbsp tomato ketchup (catsup)
-
200 g/7 oz
canned pineapple chunks in syrup
-
15 ml/1
tbsp corn-flour (cornstarch)
-
6 canned
lychees
-
6
maraschino cherries
Method:
-
Place the ducks, soy sauce, anise and ginger in a
saucepan and just cover with cold water.

Bring to
the boil, skim, then cover and simmer for about 45
minutes until the duck is cooked. Drain and pat dry.
Deep-fry in hot oil until crispy.

Meanwhile, mix the wine vinegar, sugar, stock,
tomato ketchup and 30 ml/2 tbsp of the pineapple syrup
in a pan, bring to the boil and simmer for about 5
minutes until thick.

Stir in the fruit and heat
through before pouring over the duck to serve.
