Ingredients

6 dried
Chinese mushrooms
-
1 duck
-
225 g/8 oz
chestnuts, shelled
-
225 g/8 oz
lean pork, cubed
-
3 spring
onions (scallions), chopped
-
1 slice
ginger root, minced
-
250 ml/8 fl
oz/1 cup soy sauce
-
900 ml/3 3/4 cups water
Method:
-
Soak the mushrooms in warm water for 30 minutes then
drain. Discard the stalks and slice the caps.
-
Place
in a large pan with all the remaining ingredients,
bring to the boil, cover and simmer for about 1 1/2
hours until the duck is cooked.
