Chinese Chicken Recipes - Duck with Pork and Chestnuts Recipe

Ingredients

  • 6 dried Chinese mushrooms

  • 1 duck

  • 225 g/8 oz chestnuts, shelled

  • 225 g/8 oz lean pork, cubed

  • 3 spring onions (scallions), chopped

  • 1 slice ginger root, minced

  • 250 ml/8 fl oz/1 cup soy sauce

  • 900 ml/3 3/4 cups water


Method:

  1. Soak the mushrooms in warm water for 30 minutes then drain. Discard the stalks and slice the caps.

  2. Place in a large pan with all the remaining ingredients, bring to the boil, cover and simmer for about 1 1/2 hours until the duck is cooked.
