Potatoes

Ingredients

1 duck
-
250 ml/8 fl
oz/1 cup groundnut (peanut) oil
-
225 g/8 oz
sweet potatoes, peeled and cubed
-
2 cloves
garlic, crushed
-
1 slice
ginger root. minced
-
2.5 ml/1
tsp cinnamon
-
2.5 ml/1
tsp ground cloves
-
pinch of
ground anise
-
5 ml/1 tsp
sugar
-
15 ml/1
tbsp soy sauce
-
250 ml/8 fl
oz/1 cup chicken stock
-
15ml/1
tbsp corn-flour (cornstarch)
-
30 ml/2 tbsp
water
Method:
-
Chop the duck into 5 cm/2 in pieces. Heat the oil
and deep-fry the potatoes until golden brown.

Remove
them from the pan and drain off all but 30 ml/2 tbsp
of oil. Add the garlic and ginger and stir-fry for
30 seconds.

Add the duck and fry until lightly
browned on all sides. Add the spices, sugar, soy
sauce and stock and bring to the boil.

Add the
potatoes, cover and simmer for about 20 minutes
until the duck is tender.

Blend the corn-flour to a
paste with the water then stir it into the pan and
simmer, stirring, until the sauce thickens.
