Chinese Chicken Recipes - Duck with Two Mushrooms Recipe

Ingredients

  • 6 dried Chinese mushrooms

  • 1 duck

  • 750 ml/1 1/4 pts/3 cups chicken stock

  • 45 ml/3 tbsp rice wine or dry sherry

  • 5 ml/1 tsp salt

  • 100 g/4 oz bamboo shoots, cut into strips

  • 100 g/4 oz button mushrooms


Method:

  1. Soak the mushrooms in warm water for 30 minutes then drain. Discard the stalks and halve the caps.

  2. Place the duck in a large heatproof bowl with the stock, wine or sherry and salt and stand in a pan filled with water to come two-thirds up the sides of the bowl.

  3. Bring to the boil, cover and simmer for about 2 hours until the duck is tender.

  4. Remove from the pan and cut the meat from the bone. Transfer the cooking liquid to a separate pan.

  5. Arrange the bamboo shoots and both types of mushrooms in the bottom of the steamer bowl, replace the duck meat, cover and steam for a further 30 minutes.

  6. Bring the cooking liquid to the boil and pour over the duck to serve.
