Duck with Two Mushrooms Recipe
Ingredients
6 dried
Chinese mushrooms
1 duck
750 ml/1 1/4
pts/3 cups chicken stock
45 ml/3
tbsp rice wine or dry sherry
5 ml/1 tsp
salt
100 g/4 oz
bamboo shoots, cut into strips
100 g/4 oz
button mushrooms
Method:
Soak the mushrooms in warm water for 30 minutes then
drain. Discard the stalks and halve the caps.
Place
the duck in a large heatproof bowl with the stock,
wine or sherry and salt and stand in a pan filled
with water to come two-thirds up the sides of the
bowl.
Bring to the boil, cover and simmer for about
2 hours until the duck is tender.
Remove from the
pan and cut the meat from the bone. Transfer the
cooking liquid to a separate pan.
Arrange the bamboo
shoots and both types of mushrooms in the bottom of
the steamer bowl, replace the duck meat, cover and
steam for a further 30 minutes.
Bring the cooking
liquid to the boil and pour over the duck to serve.
