Chinese Chicken Recipes - Duck with Vegetables Recipe

Ingredients

  • 1 large duck, chopped into 16 pieces

  • salt

  • 300 ml/1 1/4 cups water

  • 300 ml/1 1/4 cups dry white wine

  • 120 ml/4 fl oz/1/2 cup wine vinegar

  • 45 ml/3 tbsp soy sauce

  • 30 ml/2 tbsp plum sauce

  • 30 ml/2 tbsp hoisin sauce

  • 5 ml/1 tsp five-spice powder

  • 6 spring onions (scallions), chopped

  • 2 carrots, chopped

  • 5 cm/2 in white radish, chopped

  • 50 g/2 oz Chinese cabbage, diced

  • freshly ground pepper

  • 5 ml/1 tsp sugar


Method:

  1. Put the duck pieces in a bowl, sprinkle with salt and add the water and wine.

  2. Add the wine vinegar, soy sauce, plum sauce, hoisin sauce and five-spice powder, bring to the boil, cover and simmer for about 1 hour.

  3. Add the vegetables to the pan, remove the lid and simmer for a further 10 minutes. Season with salt, pepper and sugar then leave to cool.

  4. Cover and refrigerate overnight. Skim off any fat then reheat the duck in the sauce for 20 minutes.
