Chinese Chicken Recipes - Five-Spice Duck Recipe

Ingredients

  • 150ml/2/3 cups rice wine or dry sherry

  • 150ml/2/3 cups soy sauce

  • 1 duck

  • 10ml/2 tsp five-spice powder


Method:

  1. Bring the wine or sherry and soy sauce to the boil. Add the duck and simmer, turning for about 5 minutes.

  2. Remove the duck from the pan and rub the five-spice powder into the skin. Return the bird to the pan and add enough water to half cover the duck.

  3. Bring to the boil, cover and simmer for about 1 1/2 hours until the duck is tender, turning and basting frequently.

  4. Chop the duck into 5 cm/2 in pieces and serve hot or cold.
