Chinese Chicken Recipes - Moist Roast Duck Recipe

Ingredients

  • 6 spring onions (scallions), chopped

  • 2 slices ginger root, minced

  • 1 duck

  • 2.5 ml/1/2 tsp ground anise

  • 15 ml/1 tbsp sugar

  • 45 ml/3 tbsp rice wine or dry sherry

  • 60 ml/4 tbsp soy sauce

  • 250 ml/8 fl oz/1 cup water


Method:

  1. Place half the spring onions and ginger in a large heavy-based pan. Place the remainder in the cavity of the duck and add it to the pan.

  2. Add all the remaining ingredients except the hoisin sauce, bring to the boil, cover and simmer for about 1 1/2 hours, turning occasionally.

  3. Remove the duck from the pan and leave it to dry for about 4 hours. Place the duck on a rack in a roasting tin filled with a little cold water.

  4. Roast in a preheated oven at 230C/450F/gas mark 8 for 15 minutes then turn it over and roast for a further 10 minutes until crispy.

  5. Meanwhile, reheat the reserved liquid and pour over the duck to serve.
