Chinese Chicken Recipes - Pheasant with Almonds Recipe

Ingredients

  • 45ml/3 tbsp peanut oil

  • 2 spring onions, chopped

  • 1 slice ginger root, minced

  • 225g/8oz pheasant, very thinly sliced

  • 50g/2 oz ham, shredded

  • 30ml/2 tbsp soy sauce

  • 30ml/2 tbsp rice wine or dry sherry

  • 5ml/1 tsp sugar

  • 5ml/1 tsp freshly ground pepper

  • 2.5ml/1/2 tsp salt

  • 100g/1 cp flaked almonds


Method:

  1. Beat the oil and fry the spring onions and ginger until lightly browned.

  2. Add the pheasant and ham and stir-fry for 5 minutes until almost cooked.

  3. Add the soy sauce, wine or sherry, sugar, pepper and salt and stir-fry for 2 minutes.

  4. Add the almonds and stir-fry for 1 minute until the ingredients are thoroughly blended, it is now ready to serve.
