Ginger Duck Recipe
Ingredients

1 duck
-
100 g/4 oz
preserved ginger in syrup
-
200
g/7 oz canned pineapple chunks
in syrup
-
5 ml/1 tsp
salt
-
15 ml/1 tbsp corn-flour
(cornstarch)

30 ml/2 tbsp water
Method:
-
Place the duck in a heatproof bowl and stand it in a
pan filled with water to come two-thirds of the way
up the sides of the bowl.

Bring to the boil, cover
and simmer for about 2 hours until the duck is
tender. Remove the duck and leave to cool slightly.

Remove the skin and bone and cut the duck into
pieces. Arrange on a serving plate and keep them
warm.

Drain the syrup from the ginger and pineapple into a
pan, add the salt, corn-flour and water.

Bring to the
boil, stirring and simmer for a few minutes,
stirring, until the sauce clears and thickens.

Add
the ginger and pineapple, stir through then pour
over the duck to serve.
