Ingredients

1 duck
-
4 spring
onions (scallions), cut into
chunks
-
2 slices
ginger root, cut into strips

90 ml/6
tbsp soy sauce
-
45 ml/3
tbsp rice wine or dry sherry
-
10 ml/2 tsp
salt
-
10 ml/2 tsp
sugar
Method:
-
Place the duck in a heavy pan, just cover with water
and bring to the boil.

Add the spring onions,
ginger, wine or sherry and salt, cover and simmer
for about 1 hour.

Add the sugar and simmer for a
further 45 minutes until the duck is tender.
-
Slice
the duck on to a serving plate and serve hot or
cold, with or without the sauce.
