Chinese Chicken Recipes - Red Cooked Duck Recipe

Ingredients

  • 1 duck

  • 4 spring onions (scallions), cut into chunks

  • 2 slices ginger root, cut into strips

  • 90 ml/6 tbsp soy sauce

  • 45 ml/3 tbsp rice wine or dry sherry

  • 10 ml/2 tsp salt

  • 10 ml/2 tsp sugar


Method:

  1. Place the duck in a heavy pan, just cover with water and bring to the boil.

  2. Add the spring onions, ginger, wine or sherry and salt, cover and simmer for about 1 hour.

  3. Add the sugar and simmer for a further 45 minutes until the duck is tender.

  4. Slice the duck on to a serving plate and serve hot or cold, with or without the sauce.
