Chinese Chicken Recipes - Rice Wine Roast Duck Recipe

Ingredients

  • 1 duck

  • 500 ml/14 fl oz/1 3/4 cups rice wine or dry sherry

  • 5 ml/1 tsp salt

  • 45 ml/3 tbsp soy sauce


Method:

  1. Place the duck in a heavy-based pan with the sherry and salt, bring to the boil, cover and simmer for 20 minutes.

  2. Drain the duck, reserving the liquid, and rub it with soy sauce.

  3. Place on a rack in a roasting tin filled with a little hot water and roast in a preheated oven at 180C/350F/gas mark 4 for about 1 hour, basting regularly with the reserved wine liquid.
