Chinese Chicken Recipes - Savory Duck with Green Beans Recipe

Ingredients

  • 45 ml/3 tbsp groundnut (peanut) oil

  • 4 duck breasts

  • 3 spring onions (scallions), sliced

  • 2 cloves garlic, crushed

  • 1 slice ginger root, chopped

  • 250 ml/8 fl oz/1 cup soy sauce

  • 30 ml/2 tbsp rice wine or dry sherry

  • 30 ml/2 tbsp brown sugar

  • 5 ml/1 tsp salt

  • 450 ml/2 cups water

  • 225 g/8 oz green beans

  • 15 ml/1 tbsp corn-flour (cornstarch)


Method:

  1. Heat the oil and fry the duck breasts until golden brown.

  2. Add the spring onions, garlic and ginger and fry for 2 minutes. Add the soy sauce, wine or sherry, sugar and salt and mix well.

  3. Add the water, bring to the boil, cover and simmer for about 45 minutes. Add the beans, cover and simmer for a further 20 minutes.

  4. Mix the corn-flour with a little water then stir it into the pan and simmer, stirring, until the sauce thickens.
