Ingredients

1 duck
-
4 spring
onions (scallions), halved

1 slice
ginger root, chopped

250 ml/8 fl
oz/1 cup rice wine or dry sherry

30 ml/2
tbsp soy sauce
-
pinch of
salt
Method:
-
Blanch the duck in boiling water for 5 minutes then
drain. Place in a heatproof bowl with the remaining
ingredients.

Stand the bowl in a pan filled with
water to come two-thirds of the way up the sides of
the bowl.
-
Bring to the boil, cover and simmer for
about 2 hours until the duck is tender. Discard the
spring onions and ginger before serving.
