Chinese Chicken Recipes - Steamed Duck with Rice Wine Recipe

Ingredients

  • 1 duck

  • 4 spring onions (scallions), halved

  • 1 slice ginger root, chopped

  • 250 ml/8 fl oz/1 cup rice wine or dry sherry

  • 30 ml/2 tbsp soy sauce

  • pinch of salt


Method:

  1. Blanch the duck in boiling water for 5 minutes then drain. Place in a heatproof bowl with the remaining ingredients.

  2. Stand the bowl in a pan filled with water to come two-thirds of the way up the sides of the bowl.

  3. Bring to the boil, cover and simmer for about 2 hours until the duck is tender. Discard the spring onions and ginger before serving.
