Chinese Chicken Recipes - Stir-Fried Duck with Ginger Recipe

Ingredients

  • 1 duck

  • 2 slices ginger root, shredded

  • 2 spring onions (scallions), chopped

  • 15 ml/1 tbsp corn-flour (cornstarch)

  • 30 ml/2 tbsp soy sauce

  • 30 ml2 tbsp rice wine or dry sherry

  • 2.5 ml/1/2 tsp salt

  • 45 ml/3 tbsp groundnut (peanut) oil


Method:

  1. Remove the meat from the bones and cut into pieces. Mix the meat with all the remaining ingredients except the oil.

  2. Leave to stand for 1 hour. Heat the oil and stir-fry the duck with the marinade for about 15 minutes until the duck is tender.
