Ingredients

1 duck
-
2 slices
ginger root, shredded

2 spring onions
(scallions), chopped
-
15 ml/1 tbsp
corn-flour (cornstarch)

30 ml/2 tbsp soy
sauce
-
30 ml2 tbsp rice
wine or dry sherry

2.5 ml/1/2 tsp salt
-
45 ml/3 tbsp
groundnut (peanut) oil
Method:
-
Remove the meat from the bones and cut into pieces.
Mix the meat with all the remaining ingredients
except the oil.

Leave to stand for 1 hour. Heat the
oil and stir-fry the duck with the marinade for
about 15 minutes until the duck is tender.
