Ingredients

1 duck
-
1.2 l/2
pts/5 cups chicken stock

2 onions
-
2 carrots
-
2 cloves
garlic, sliced

15 ml/1
tbsp pickling spice
-
10 ml/2 tsp
salt
-
10 ml/2 tsp
groundnut (peanut) oil
-
6 spring
onions (scallions), chopped
-
1 mango,
peeled and cubed
-
12 lychees,
halved
-
15 ml/1
tbsp corn-flour (cornstarch)
-
15 ml/1
tbsp wine vinegar
-
10 ml/2 tsp
tomato puree (paste)
-
15 ml/1
tbsp soy sauce
-
5 ml/1 tsp
five-spice powder
-
300 ml/1 1/4 cups chicken stock
Method:
-
Arrange the duck in a steam basket over a pan
containing the stock, onions, carrots, garlic,
pickling spice and salt.
-
Cover and steam for 2 1/2
hours. Cool the duck, cover and chill for 6 hours.
Remove the meat from the bones and cut it into
cubes.

Heat the oil and fry the duck and spring
onions until crisp.
-
Stir in the remaining ingredients, bring to the boil and simmer for 2
minutes, stirring, until the sauce thickens.
