Chinese Chicken Recipes - Sweet and Sour Duck Recipe

Ingredients

  • 1 duck

  • 1.2 l/2 pts/5 cups chicken stock

  • 2 onions

  • 2 carrots

  • 2 cloves garlic, sliced

  • 15 ml/1 tbsp pickling spice

  • 10 ml/2 tsp salt

  • 10 ml/2 tsp groundnut (peanut) oil

  • 6 spring onions (scallions), chopped

  • 1 mango, peeled and cubed

  • 12 lychees, halved

  • 15 ml/1 tbsp corn-flour (cornstarch)

  • 15 ml/1 tbsp wine vinegar

  • 10 ml/2 tsp tomato puree (paste)

  • 15 ml/1 tbsp soy sauce

  • 5 ml/1 tsp five-spice powder

  • 300 ml/1 1/4 cups chicken stock


Method:

  1. Arrange the duck in a steam basket over a pan containing the stock, onions, carrots, garlic, pickling spice and salt.

  2. Cover and steam for 2 1/2 hours. Cool the duck, cover and chill for 6 hours. Remove the meat from the bones and cut it into cubes.

  3. Heat the oil and fry the duck and spring onions until crisp.

  4. Stir in the remaining ingredients, bring to the boil and simmer for 2 minutes, stirring, until the sauce thickens.
