Chinese Chicken Recipes - Tangerine Duck Recipe

Ingredients

  • 1 duck

  • 60 ml/4 tbsp groundnut (peanut) oil

  • 1 piece dried tangerine peel

  • 900 ml/3 3/4 cups chicken stock

  • 5 ml/1 salt


Method:

  1. Hang the duck to dry for 2 hours. Heat half the oil and fry the duck until lightly browned. Transfer to a large heatproof bowl.

  2. Heat the remaining oil and fry the tangerine peel for 2 minutes then place it inside the duck. Pour the stock over the duck and season with salt.

  3. Place the bowl on a rack in a steamer, cover and steam for about 2 hours until the duck is tender.
