Ingredients

1 duck
-
60 ml/4 tbsp
groundnut (peanut) oil

1 piece
dried tangerine peel
-
900 ml/3 3/4 cups chicken stock

5 ml/1
salt
Method:
-
Hang the duck to dry for 2 hours. Heat half the oil
and fry the duck until lightly browned. Transfer to
a large heatproof bowl.

Heat the remaining oil and
fry the tangerine peel for 2 minutes then place it
inside the duck. Pour the stock over the duck and
season with salt.

Place the bowl on a rack in a
steamer, cover and steam for about 2 hours until the
duck is tender.
