Chinese Chicken Recipes - Venison with Dried Mushrooms Recipe

Ingredients

  • 8 dried Chinese mushrooms

  • 450 g/1lb venison fillet, cut into strips

  • 15 ml/1 tbsp juniper berries, ground

  • 15 ml/1 tsp sesame oil

  • 30 ml/2 tbsp soy sauce

  • 30 ml/2 tbsp hoisin sauce

  • 5 ml/1 tsp five-spice powder

  • 30 ml/2 tbsp groundnut (peanut) oil

  • 6 spring onions, chopped

  • 30 ml/2 tbsp honey

  • 30 ml/2 tbsp wine vinegar


Method:

  1. Soak the mushrooms in warm water for 30 minutes then drain. Discard the stalks and slice the caps.

  2. Place the venison in a bowl. Mix the juniper berries, sesame oil, soy sauce, hoisin sauce and five-spice powder, pour over the venison and marinate for at least 3 hours, stirring occasionally.

  3. Heat the oil and stir-fry the meat for 8 minutes until cooked. Remove from the pan.

  4. Add the spring onions and mushrooms to the pan and stir-fry for 3 minutes.

  5. Return the meat to the pan with the honey and wine vinegar and heat through, stirring and serve.
