Chinese Chicken Recipes - White Cooked Duck Recipe

Ingredients

  • 1 slice ginger root, chopped

  • 250 1/8 fl oz/1 cup rice wine or dry sherry

  • salt and freshly ground pepper

  • 1 duck

  • 3 spring onions (scallions), chopped

  • 5 ml/1 tsp salt

  • 100 g/4 oz bamboo shoots, sliced

  • 100 g/4 oz smoked ham, sliced


Method:

  1. Mix the ginger, 15 ml/1 tbsp wine or sherry, a little salt and pepper. Rub over the duck and leave to stand for 1 hour.

  2. Place the bird in a heavy-based pan with the marinade and add the spring onions and salt.

  3. Add enough cold water just to cover the duck, bring to the boil, cover and simmer for about 2 hours until the duck is tender.

  4.  Add the bamboo shoots and ham and simmer for a further 10 minutes and serve.
