Ingredients

1/8 fl oz/1 cup rice
wine or dry sherry

spring onions
(scallions), chopped

ml/1 tsp salt

g/4 oz bamboo shoots,
sliced

g/4 oz smoked ham,
sliced
Method:

Mix the ginger, 15 ml/1 tbsp wine or sherry, a
little salt and pepper. Rub over the duck and leave
to stand for 1 hour.

Place the bird in a heavy-based
pan with the marinade and add the spring onions and
salt.

Add enough cold water just to cover the duck,
bring to the boil, cover and simmer for about 2
hours until the duck is tender.

Add the bamboo
shoots and ham and simmer for a further 10 minutes
and serve.
