Chinese Chicken Recipes - Wine Vapor Duck Recipe

Ingredients

  • 1 duck

  • celery salt

  • 200 ml/7fl oz/scant 1 cup rice wine or dry sherry

  • 30 ml/2 tbsp chopped fresh parsley


Method:

  1. Rub the duck with celery salt inside and out then place it in a deep ovenproof dish.

  2. Place an ovenproof cup containing the wine into the cavity of the duck.

  3. Place the dish on a rack in a steamer, cover and steam over boiling water for about 2 hours until the duck is tender.
