Chinese Eggs Recipes - Chicken Soufflé Recipe

Ingredients

  • 4 eggs whites

  • 100g/4oz chicken breast, minced

  • 45ml/3 tbsp chicken stock

  • 2.5ml/1/2 tsp salt

  • 75ml/5 tbsp peanut oil


Method:

  1. Mix the chicken, stock ad salt together well. Whisk the egg whites until stiff and fold them into the mixture.

  2. Heat the oil to smoking point, add the mixture and stir well then lower the heat and continue to cook, stirring gently, until the mixture is just firm.
