Chinese Eggs Recipes - Chinese Omelet with Bean Sprouts Recipe

Ingredients

  • 4 eggs

  • 100g/4 oz bean sprouts

  • salt and freshly ground pepper

  • 30ml/2 tbsp peanut oil

  • 1/2 small green pepper, chopped

  • 2 spring onions, chopped


Method:

  1. Blanch the bean sprouts in boiling water for 2 minutes then drain well. Beat the eggs lightly and season with salt and pepper.

  2. Heat the oil and stir-fry the pepper and spring onions for 1 minute. Add the bean sprouts and stir until coated with oil.

  3. Pour the eggs the covers the surface. Lift the edges of the omelet as the eggs set so that the uncooked egg can run underneath.

  4. Cook until just set then fold in half and serve at once.
