Chinese Eggs Recipes - Chinese Scrambled Eggs Recipe

Ingredients

  • 4 eggs, lightly beaten

  • 2 spring onions, chopped

  • pinch of salt

  • 5ml/1 tsp soy sauce

  • 30ml/2 tbsp peanut oil


Method:

  1. Beat the eggs with the spring onions, salt and soy sauce, if using.

  2. Heat the oil then pour in the egg mixture. Stir gently with a fork until the eggs are just set. Serve at once.
