Chinese Eggs Recipes - Crab Foo Yung with Mushrooms Recipe

Ingredients

  • 6 eggs, beaten

  • 45ml/3 tbsp corn-flour

  • 100g/4oz crab meat

  • 100g/4 oz mushrooms, diced

  • 100g/4oz frozen peas

  • 2 spring onions, chopped

  • 5ml/1 tsp salt

  • 45ml/3 tbsp peanut oil


Method:

  1. Beat the eggs then beat in the corn-flour. Add all the remaining ingredients except the oil.

  2. Heat a little of the oil and pour the mixture into the pan a little at a time to make small pancakes about 7.5cm/3 in across.

  3. Fry until the bottom is lightly browned then turn and brown the other side. Continue until you have used al the mixture.
