Chinese Eggs Recipes - Crab Omelet with Brown Sauce Recipe

Ingredients

  • 15ml/1 tbsp peanut oil

  • 4 eggs, beaten

  • 2.5ml/1/2 tsp salt

  • 200g/7oz crab meat, flaked

  • 175ml/3/4 cup chicken stock

  • 15ml/1 tbsp soy sauce

  • 10ml/2 tsp corn-flour

  • 45ml/3 tbsp cooked green peas


Method:

  1. Heat the oil. Beat the eggs and salt and stir in the crab meat.

  2. Pour into the pan and cook, lifting the edges of the omelet as the eggs set so that the uncooked egg can run underneath.

  3. Cook until just set then fold in half and transfer to a warmed serving plate.

  4. Meanwhile, heat the stock with the soy sauce and corn-flour, stirring until the mixture boils and thickens.

  5. Simmer for 2 minutes then stir in the peas. Pour over the omelet just before serving.
