Chinese Eggs Recipes - Crab Soufflé Recipe

Ingredients

  • 4 eggs whites

  • 100g/4oz crab meat, flaked

  • 15ml/1 tbsp corn-flour

  • 120ml/1/2 cup milk

  • salt

  • 75ml/5 tbsp peanut oil


Method:

  1. Mix the crab meat, salt, corn-flour and mix together well. Whisk the egg whites until stiff then fold them into the mixture.

  2. Heat the oil to smoking point, add the mixture and stir well then lower the heat and continue to cook, stirring gently, until the mixture is just firm.
