Chinese Eggs Recipes - Deep-Fried Pork Eggs Recipe

Ingredients

  • 100g/4oz minced pork

  • 2 spring onions, minced

  • 15ml/1 tbsp corn-flour

  • 15ml/1 tbsp rice wine or dry sherry

  • 15ml/1 tbsp soy sauce

  • 2.5ml/1/2 tsp salt

  • 4 hardboiled eggs

  • oil for deep-frying

  • 1/2 head lettuce, shredded


Method:

  1. Mix together the pork, spring onions, corn-flour, wine or sherry, soy sauce and salt. Shape around the eggs to coat them completely.

  2. Heat the oil and deep-fry the eggs until the coating is golden brown and cooked through.

  3. Remove and drain well then serve on a bed of lettuce.
